Strawberry Grilled Cheese Recipe
Perfect for breakfast, lunch or dinner. I love using crusty multigrain bread for this. You can use any bread you like.
Ingredients
4 slices bread
1 cup strawberries, sliced thick
1/4 cup balsamic vinegar
1 cup shredded mozzarella or 4-5 thick slices
1/4 cup smoked gouda
1/4 stick soft butter
1/4 cup fresh basil or arugula
balsamic reduction (optional)
Method
Core the strawberries and slice them thickly, about 4 slices per berry.
Soak in balsamic vinegar and marinate for 15-20 minutes.
Butter the bread and place slices of fresh mozzarella or a generous amount of shredded mozzarella on each slice.
Place the marinated strawberries on the cheese.
Add some fresh basil leaves or arugula leaves.
Add a layer of smoked gouda.
Cover with mozzarella cheese and the other slice of bread.
Grill on a pan or in a panini press until the cheese melts and the bread is crispy and browned to your liking.
Cut into two and serve with a drizzle of balsamic reduction.
