Summer Recipe

Hello! How are you? I hope you enjoyed the sample chapter I shared with you last time.

Today I am sharing a recipe from Pancakes and Parrots. It is super simple and great even for novice cooks. What happens when my love for grilled cheese meets Jenny’s penchant for strawberries? Strawberry grilled cheese, of course.

Strawberry Grilled Cheese Recipe

Perfect for breakfast, lunch or dinner. I love using crusty multigrain bread for this. You can use any bread you like.

Ingredients

4 slices bread

1 cup strawberries, sliced thick

1/4 cup balsamic vinegar

1 cup shredded mozzarella or 4-5 thick slices

1/4 cup smoked gouda

1/4 stick soft butter

1/4 cup fresh basil or arugula

balsamic reduction (optional)

Method

Core the strawberries and slice them thickly, about 4 slices per berry.

Soak in balsamic vinegar and marinate for 15-20 minutes.

Butter the bread and place slices of fresh mozzarella or a generous amount of shredded mozzarella on each slice.

Place the marinated strawberries on the cheese.

Add some fresh basil leaves or arugula leaves.

Add a layer of smoked gouda.

Cover with mozzarella cheese and the other slice of bread.

Grill on a pan or in a panini press until the cheese melts and the bread is crispy and browned to your liking.

Cut into two and serve with a drizzle of balsamic reduction.

Quick and Easy Tomato Dip [RECIPE]

Recipe of the Month

I am going to make this a thing! The recipes may or may not be from the books but they will certainly be something you can enjoy.

Many of you loved the Hard Times Tomato Soup. That is one reason I chose a tomato recipe. Other reasons? I love tomatoes, it’s summer, tomatoes are available everywhere, many people grow tomatoes at this time, etc. etc.

This recipe is more of a guideline. You can modify this in many ways and make it your own. I will suggest variations, hoping it doesn’t become too confusing.

Quick and Easy Tomato Dip

Ingredients

6-8 medium tomatoes

2 Tbsp chopped ginger

2 Tbsp blanched almonds

2 Tbsp light oil

½ tsp sweet paprika

1 tsp sugar

Salt to taste

¼ cup plain yogurt or Greek yogurt

Method

Cut the tomatoes into chunks.

Heat oil in a pan and add the tomatoes, ginger and the almonds. Stir them till they are bruised and softened. Add spices and seasonings. The tomatoes will sweat a bit, releasing some juice. That is perfectly normal. Switch off heat at this point and cool the mixture completely.

Blend the tomato mixture without adding more liquid.

Your dip is ready. You can add in the yogurt at this point and pulse a few times until it is mixed in.

Refrigerate and use as a dip for chips or crudite, slather on toast, wraps or crackers.

Options – if you don’t like ginger, you can use garlic. Absolutely. Each will give a different flavor to the dip.

I used light oil because I want the tomatoes to shine but you can use extra virgin olive oil.

Use cashews instead of almonds. Or go nut free and use sunflower seeds.

Liven things up a bit by using dried herbs like oregano or mint.

Want more heat? Try adding half a fresh jalapeno pepper, or a dried chipotle or ancho chili.

That’s it! Something fresh and zesty for the next time you are curling up on that couch and going on a cozy mystery binge.

I read a lot of books, especially cozy mysteries. And I love the 1920s genre. But recently I read a historical mystery set in the Regency era. It’s worth checking out.

Stretch a Buck [RECIPE]

Hello! Hope you are all keeping safe and taking care of yourself in these hard times.

All we can do is stay positive, keep calm and believe that better times are ahead of us. And say a prayer for those who are affected and hope they conquer this dreaded virus.

As a writer, I am home bound most of the time and in a kind of self quarantine. So my daily schedule hasn’t changed much. But everything that’s happening around me is making it difficult to concentrate on work, which means writing isn’t getting done. So I thought I would shift gears and try to come up with some easy recipes.

Many of you have asked for recipes and I have mentioned a recipe book that will come out in the future. This is the first time I am sharing one of Jenny’s recipes. Hope you like it and try it out. I have tried to make it easy and pocket friendly, using pantry ingredients.

It features a family road trip along Route 66 and a mystery that is solved long distance over the phone. The setting is turn of the century, a time when there were no video chats and no smart phones. Are you ready for the recipe now? It’s just a simple tomato soup that can be made with things you generally have on hand. I know the first day of spring is almost here, but it’s still cool enough to eat soup, right?

Winter Hard Times Tomato Basil Soup RECIPE

Ingredients

½ cup onion, diced

½ cup celery, diced

1 clove garlic, crushed or minced

1 dry bay leaf

2 cups carrots, cooked

5-6 cups crushed tomatoes

2 cups vegetable stock or water

1 can evaporated milk

1 Tbsp corn starch

1 tsp fresh ground black pepper

¼ tsp paprika

2 tsp sugar

½ – 1 tsp dried basil

2 Tbsp butter

2 Tbsp olive oil

salt to taste

Method

Add butter and oil to a stock pot and let the butter melt.

Add the bay leaf.

Add onions, garlic and celery and sauté on medium flame until softened.

Add carrots and tomatoes along with the stock.

Add all the herbs and seasonings and bring to a boil. Simmer for 10-15 minutes.

Whisk corn starch and evaporated milk together.

Reduce heat and add it to the soup. Stir to combine well. You can blend the soup in the pot if you want it very smooth.

Serve hot with fresh cracked pepper and a pinch of dried basil.

Notes – You can use 1/2 tsp garlic powder instead of fresh garlic. Same for the onions. Use fresh milk or half and half instead of evaporated milk.

Makes about 8 cups of soup!!

WRITING UPDATE

The next Dolphin Bay book, Book 4, is almost ready to go to my editor. I am hoping to release it by the middle of next month. This is a Christmas themed book. I am not sure how many of you will want to read it in Feb. But it is the right time for Christmas in Dolphin Bay. The book got delayed because I got sick in November and December.

Next on the calendar is new covers for my Meera Patel series. I may also lightly edit it or give it a onceover. This will take time and delay the next Dolphin Bay book so I’m in two minds. This series is heavy on diversity and food! Some of the readers felt there was too much food. More about it soon.

Welcome 2020 (New Book Inside)

Wish you a Happy New Year. Hope this year brings you peace and good health. It’s the dawn of a new decade and I eagerly await what lies ahead.

Mystery fans got some sad news this week with the demise of M. C. Beaton. She’s one of my favorite authors and truly an inspiration. May she rest in peace. I have no doubt she will continue to entertain readers forever.
